Ingredients list for Lotus Wrapped Chicken
- 800 grams Whole Chicken with Skin with skin
- 2-3 Lotus Leaves
- 1 medium Onion
- 8-10 Garlic cloves
- 7-8 Fresh parsley sprigs
- 3 Hard-boiled eggs peeled
- 1 cup Fresh breadcrumbs
- to taste Salt
- 1/2 tsp + Crushed black peppercorns
- 1 Egg
- 1 Lemon
- Aluminium foil
- 2 tablespoons Dark soy sauce
- 2 tablespoons Red chilli sauce
- 2 tablespoons Honey
Method
- Coarsely chop onion, garlic, parsley and roughly chopped hard boiled eggs in a chopper.
- Place fresh breadcrumbs in a large mixing bowl, add the chopped ingredients, salt, crushed black peppercorn, raw egg and mix well.
- Boil plenty of water in a deep non-stick pan.
- Sprinkle salt and little crushed black peppercorns over the whole chicken.
- Cut lemon into 4 pieces and put inside the chicken cavity. Stuff the chicken with the prepared mixture and secure the open end with toothpicks.
- Wrap the chicken in lotus leaves. Then wrap in 2-3 layers of aluminium foil till the chicken is completely sealed.
- Put the packet in boiling water, cover the pan and cook on medium heat for about 1 hour. If the water level reduces, add more water.
- You can also cook the chicken in a preheated oven.
- To make the glaze mix dark soy sauce, red chilli sauce and honey well. Apply this on the chicken, cut into slices and serve hot.
