Ingredients list for Lemon Grass Chilli Rice

  • 2 inches Lemon grass stalk
  • 1 1/2 cup Basmati rice soaked
  • 7-8 small Fresh red chillies
  • 1 medium Fresh red chilli sliced
  • 2 tablespoons Oil
  • 1 tablespoon Butter
  • 1/4 teaspoon Coriander seeds
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Onion chopped
  • 10-12 Shallots
  • 6-8 Mushrooms halved
  • 6-8 Cauliflower florets
  • 1 medium Carrot,cut into dices
  • 1 medium Potato cut into dices
  • 1/3 cup Fresh coriander leaves
  • 5 tablespoons Green peas boiled
  • to taste Salt
  • 1 Lemon

Method

  1. Heat oil and butter in non stick pan. Add coriander seeds and cumin seeds, sauté for 1 minute.
  2. Add onion and shallots and mix.
  3. Chop lemon grass and add alongwith small fresh red chillies, sliced red chilli, mushrooms, cauliflower florets, carrot and potato and mix well.
  4. Cover and cook for 2 minutes.
  5. Roughly chop coriander leaves.Add green peas, salt, rice and 3 cups of water.
  6. Mix well, cover and cook for 2-3 minutes.
  7. Cut lemon into slices and add along with coriander leaves and mix well.
  8. Cover and cook on medium heat for 8-10 minutes or till rice is done. Serve hot.
