Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Kurkure Mushrooms-SK Khazana Recipe

  • Button mushrooms 12-16

  • Gruyere cheese grated 1 cup

  • Spring onion greens chopped 2 tablespoons

  • Fresh red chillies chopped 2

  • Black peppercorns crushed to taste

  • Fresh parsley finely chopped 1 tablespoon

  • Salt to taste

  • Refined flour slurry as required

  • Panko breadcrumbs as required

  • Oil to deep fry

  • Tomato ketchup to serve

Method

Step 1

Mix together gruyere cheese, spring onions, red chillies, crushed peppercorns, parsley and salt in a bowl.

Step 2

Stuff this mixture into mushrooms. Dip them in the refined flour slurry and coat with panko. Repeat the process.

Step 3

Heat sufficient oil in a kadai. Deep-fry stuffed mushrooms till golden brown and crisp. Drain on absorbent paper.

Step 4

Serve hot with tomato ketchup.
