Ingredients list for Konkani Chicken and Raw Mango Curry
- 750 grams Chicken cut into 2 inch pieces on the bone
- 1 Medium raw mango
- to taste Salt
- 1/4 teaspoon Turmeric powder
- 2 tablespoons Coconut oil
- 1/2 Fresh coconut scraped
- 4 Dried red chillies
- 1 teaspoon Rice
- 1 Medium onion chopped
- 1 (20 gram Tata Sampann Chicken Masala sachet
- 2 teaspoons Tamarind pulp
- 5-6 Dried kokum petals
- for garnish Fresh coriander sprig
- to serve Cooked red rice
Method
- Marinate chicken with salt and turmeric powder.
- Heat coconut oil in a deep non-stick pan. Add coconut, red chillies, rice, half the chopped onion and half Tata Sampann Chicken Masala and sauté for a few seconds.
- Drain and transfer the mixture into a blender jar, add sufficient water and blend to a fine paste.
- Add remaining onion to the same pan and sauté for 3-4 minutes.
- Peel, remove seed and cut half the raw mango into ½ inch pieces. Cut the unpeeled mango into ½ inch pieces.
- Add chicken to the pan, mix and sauté for 2-3 minutes. Add remaining Tata Sampann Chicken Masala and mix well. Add salt, mix and sauté for 3-4 minutes.
- Add the ground paste and mix well. Add 1 cup water and stir to mix. Add raw mango pieces and mix well.
- Add tamarind pulp, mix, cover and cook on medium heat for 15-20 minutes. Add kokum petals and mix well.
- Garnish with coriander sprig and serve hot with red rice.
