Ingredients
- 1 small jackfruit (kathal), peeled, peeled, cut into pieces and boiled
- 3 teaspoons red chilli powder
- ½ teaspoon turmeric powder
- 1½ teaspoons garam masala powder
- Salt to taste
- 1 small onion, finely chopped
- 2 tablespoons chopped fresh mint leaves
- 4 tablespoons chopped fresh coriander leaves
- 2-3 green chillies, finely chopped
- 2 tablespoons roasted gram flour
- Oil for shallow frying
- Onion rings for garnish
- Micro greens for garnish
- Green chutney to serve
Method
- In a bowl, add raw jackfruit and mash it well.
- Add red chilli powder, turmeric powder, garam masala powder, salt, onion, fresh mint, fresh coriander, roasted gram flour. Mix it till well combined.
- Divide the mixture into equal portions and shape them into kebabs. Set aside.
- Heat sufficient oil in a non-stick pan, place the prepared kebabs and shallow fry till golden and crispy. Drain on an absorbent paper.
- Garnish with onion rings, micro greens and serve hot along with green chutney.
