Ingredients list for Kaju Saathe Khichdi Pulao
- 1 1/2 cups Basmati rice
- 1 tablespoon Cashewnuts roughly chopped
- 6 tablespoons Ghee
- 1 inch stick Cinnamon
- 2 Black cardamoms
- 2 Star anise
- 2 Mace
- 5-6 Peppercorns
- 1 medium Onion sliced
- 1/2 teaspoon Turmeric powder
- 1 1/2 cups Coconut milk
- to taste Salt
- 10 French beans cut into diamonds
- 1 small Carrot cut into diamonds
- 2 medium Green capsicums deseed and julienne
- 1/2 cup Green peas shelled
- 1/8 cup Raisins
- 5-6 Green chillies paste
Method
- Wash and soak rice in three cups of water for half an hour. Drain and keep aside.
- Heat three tablespoons of ghee in a pan. Add cinnamon, black cardamoms, star anise, mace and peppercorns. Stir and cook for five seconds. Add onion and sauté for five to six minutes till golden brown. Add turmeric powder and stir well.
- Add rice, stir well and sauté for seven to eight minutes. Add coconut milk slowly till the rice is well soaked. Stir well. Add one and half cups of water and salt to taste. Stir well. Cook, covered, for ten to fifteen minutes.
- Heat remaining three tablespoons of ghee in another pan. Add French beans and carrot. Stir well and cook for two minutes.
- Add capsicum julienne, green peas, cashewnuts, raisins, green chilli paste and salt to taste. Stir well and cook for two to three minutes. Add these sautéed vegetables to rice. Mix well and serve hot.
