Ingredients list for Jaggery Cake

  • 3/4 cup Jaggery powder
  • 1/2 cup Yogurt
  • 1/4 cup Oil
  • 1 teaspoon Vanilla essence
  • 1 cup Whole wheat flour (gehun ka atta)
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • a pinch Cinnamon powder
  • 1/4 cup Milk

Method

  1. Preheat an oven to 180° C
  2. Take the yogurt in a bowl, add oil, vanilla essence and jaggery powder and beat with an electric beater till the jaggery melts.
  3. Sift the whole wheat flour, baking powder, baking soda and cinnamon powder directly into the yogurt mixture and mix and fold in. Add milk and mix gently till a smooth batter is formed.
  4. Pour the batter into a 6 x 2 x 2 inch silicon rectangular cake mould and tap a few times.
  5. Place the cake mould on a baking tray, keep the tray in the preheated oven and bake for 25-30 minutes.
  6. Bring the baking tray out of the oven and allow the cake to cool completely.
  7. De-mould and slice. Arrange the slices on a serving platter and serve.
