Ingredients list for Jaggery Cake
- 3/4 cup Jaggery powder
- 1/2 cup Yogurt
- 1/4 cup Oil
- 1 teaspoon Vanilla essence
- 1 cup Whole wheat flour (gehun ka atta)
- 1 teaspoon Baking powder
- 1/2 teaspoon Baking soda
- a pinch Cinnamon powder
- 1/4 cup Milk
Method
- Preheat an oven to 180° C
- Take the yogurt in a bowl, add oil, vanilla essence and jaggery powder and beat with an electric beater till the jaggery melts.
- Sift the whole wheat flour, baking powder, baking soda and cinnamon powder directly into the yogurt mixture and mix and fold in. Add milk and mix gently till a smooth batter is formed.
- Pour the batter into a 6 x 2 x 2 inch silicon rectangular cake mould and tap a few times.
- Place the cake mould on a baking tray, keep the tray in the preheated oven and bake for 25-30 minutes.
- Bring the baking tray out of the oven and allow the cake to cool completely.
- De-mould and slice. Arrange the slices on a serving platter and serve.
