Ingredients 

  • 250 grams tinned jackfruit
  • 1/4 cup chopped onions 
  • 3 tablespoons oil  + to deep fry
  • 1 black cardamom, seeds separated
  • 4-5 dried red chillies, broken
  • 3/4 teaspoon roasted cumin powder
  • 1/2 teaspoon garam masala powder
  • 2 teaspoons coriander powder
  • 1/2 teaspoon Mexican chilli powder
  • 1/2 teaspoon red chilli powder
  • 1/4 teaspoon turmeric powder
  • 1 cup tomato puree
  • Salt to taste

Method

  1. Drain the jackfruit pieces and deep fry till golden. Drain on absorbent paper.
  2. Heat 3 tbsps oil in another pan, add onions and saute till well browned.
  3. Add black cardamom seeds and red chillies and continue to saute for 2 minutes.
  4. Add roasted cumin powder and garam masala powder and saute for 1 minute.
  5. Add coriander powder, Mexican chilli powder, red chilli powder and turmeric powder and mix well.
  6. Add tomato paste or tomato puree and mix well. Saute till oil begins to separate. Add salt and mix.
  7. Add fried jackfruit pieces and mix well. Ideally keep the curry for 1 day so that the jack fruit pieces soak in the masala well.
  8. Next day heat the curry and serve hot with roti.
