Ingredients
- ½ teaspoon honey
- ½ teaspoon dried red chilli flakes
- ½ teaspoon chilli powder
- ½ teaspoon red chilli sauce
- 200 grams frozen potato wedges
- 2 teaspoons oil + for deep frying
- 1 teaspoon finely chopped garlic
- ½ teaspoon finely chopped ginger
- 2-3 spring onion bulbs, finely chopped
- 2 tablespoons chopped spring onion greens + for garnish
- 2 teaspoons chopped fresh coriander leaves + for garnish
Method
- Heat sufficient oil in a kadai, deep fry the potato wedges till golden brown and crisp. Drain on an absorbent paper.
- Cut the bigger pieces of the potato wedges in half.
- Heat 2 teaspoons oil in a wok, add garlic, ginger, spring onion bulbs and sauté for a minute.
- Add the fried potato wedges and toss well.
- Add dried red chilli flakes and chilli powder and mix well.
- Add red chilli sauce and mix well. Add spring onion greens, chopped coriander, honey and salt and toss till well combined.
- Transfer the prepared mixture on a serving plate, garnish with spring onion greens and chopped coriander and serve hot.
