Ingredients list for Hearty Red Lentil Soup
- 1 cup Split Red Lentil soaked
- 1/4 cup Basmati Rice soaked
- 2 medium Onions roughly chopped
- 2 medium Carrots roughly chopped
- 2 medium Tomatoes roughly chopped
- 8-10 Black peppercorns
- 1 teaspoon Butter
- 1 teaspoon Garlic chopped
- 1 teaspoon Crushed red chillies
- to taste Salt
- 1/4 cup Milk
- 2 teaspoons Mint leaves crushed
Method
- Drain the lentils, rice and put into a pressure cooker. Add the onions, carrots, tomatoes, peppercorns and mix.
- Add four cups of water and pressure cook till the pressure is released thrice (three whistles). Allow the mixture to cool.
- Transfer into a blender and grind into a fine puree.
- Heat the butter in a non-stick pan. Add the garlic and sauté till well browned.
- Add the puree, crushed red chillies, salt and milk and mix well.
- Add water if you feel the consistency is too thick. Serve hot garnished with mint leaves.
