Ingredients for Grilled Salmon with White Butter-SK Khazana Recipe

  • Salmon cut into thick pieces 250 grams

  • Salt to taste

  • Black peppercorns to taste

  • Lemon juice 1/2 tablespoon

  • White butter 3 tablespoons

  • Medium white onion finely chopped 1

  • Fresh rosemary 2 sprigs

  • White wine vinegar 2 tablespoons

  • Fresh cream 1/2 cup

  • Butter 2 tablespoons

  • Oil `1 tablespoon

  • Yellow zucchini 4 slices

  • Green zucchini 4 slices

  • Yellow capsicum triangles 101-2

  • Broccoli 10-12 floret

  • Cherry tomatoes 10-12

Method

Step 1

Place salmon pieces on a plate. Add salt, crushed peppercorns and lemon juice and rub well. Set aside to marinate.

Step 2

Heat 1 tablespoon white butter in a non-stick pan. Add white onion and 1 rosemary sprig, mix and sauté till onions turn translucent.

Step 3

Add white wine and salt and mix. Add cream, stir to mix and bring to a boil.

Step 4

Add remaining white butter and mix till it melts. Add some water, stir to mix and bring to a boil. Remove from heat and set aside.

Step 5

Heat butter and oil in a non-stick grill pan. Add marinated salmon pieces, remaining rosemary sprig, yellow and green zucchini slices, capsicum triangles, and broccoli florets.

Step 6

Sprinkle salt, crushed peppercorns and cherry tomatoes and grill. Flip the salmon pieces and continue to grill till they are fully cooked and grill marks appear both on the salmon pieces and the vegetables.

Step 7

Strain the prepared sauce into a bowl. Arrange the grilled vegetables and salmon pieces on a serving platter and pour over them.

Step 8

Serve hot.
