Grilled Mushroom Melts

A sandwich is something that you can eat at any time of the day. This loaded one has a cheesy mushroom mixture sandwiched between ciabatta bread slices and grilled to a crisp. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 8-10 button mushrooms, thinly sliced
  • Cheddar cheese grated, as required
  • Mozzarella cheese grated, as required
  • 1 Ciabatta bread, sliced
  • 1 tablespoon oil
  • 1 medium onion, finely chopped
  • 1 tablespoon garlic, chopped
  • Salt to taste
  • Crushed black peppercorns to taste
  • ½ teaspoon mixed herbs
  • Butter for spreading + for greasing

Method

  1. Preheat an electric griller.
  2. Heat oil in a non-stick pan. Add onion and sauté for a minute. Add garlic and sauté till golden.
  3. Add mushrooms, mix and cook for 1 minute. Add salt and crushed peppercorns and mix. Add dried herbs, mix and cook for 2-3 minutes.
  4. Spread butter on each bread slice. Sprinkle cheddar cheese, mushroom mixture, and mozzarella cheese on half the bread slices and cover with the remaining bread slices.
  5. Grease the preheated electric griller with some butter. Grill the sandwich still golden on both sides.
  6. Cut into halves and serve hot.
