Ingredients
- 1½ cups fresh green chana, blanched
- 3-4 garlic cloves
- 2-3 green chillies
- 1 medium onion
- Salt to taste
- ½ tablespoon cumin powder
- 2½ tablespoons gram flour (besan)
- 1 teaspoon baking powder
- 1 tablespoon olive oil + for greasing
- Microgreens for garnish
- Red radish slices to serve
- A few iceberg lettuce leaves to serve
- Pickled beetroot pieces to serve
- Garlic aioli to serve
Method
- Put green chana, garlic and broken green chillies into a food processer jar.
- Roughly chop onion and add. Add salt, cumin powder and a little water and process into a coarse paste. Transfer into a large bowl.
- Add gram flour and baking powder and mix well. Add olive oil and mix well.
- Heat a non-stick waffle iron, grease with oil and pour some mixture and spread it evenly. Close and cook till golden and crisp. Remove and place on a serving plate. Make more waffles similarly.
- Garnish with microgreens. Serve hot with radish, lettuce, pickled beetroot and garlic aioli.
