Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Green Chana Barfi Recipe

  • Fresh green chickpeas (harbhara) 1 1/2 cups

  • Ghee 1/2 cup + for greasing

  • Mawa 1 1/2 cups

  • Green cardamom powder 3/4 teaspoon

  • Powdered sugar 1 1/4 cups

  • Pistachios blanched, peeled and cut into slivers 5-6 + for garnish

  • Cashewnuts chopped 8-10 + for garnish

  • Almonds cut into slivers 8-10 + for garnish

  • Silver warq for garnish

Method

Step 1

Put the green chickpeas into a food processor jar, coarsely process it and transfer into a bowl.

Step 2

Heat ghee in a non-stick kadai, add the coarse paste and sauté on medium heat for 15-20 minutes.

Step 3

Add mawa, mix well and sauté till it melts. Add green cardamom powder, and mix well.

Step 4

Reduce heat and add sugar, mix till well combined. Add pistachio nuts and cashewnuts and mix well.

Step 5

Grease a barfi tray with ghee, transfer the cooked mixture into it, spread it evenly and tap it a few times.

Step 6

Sprinkle almonds, cashewnuts and pistachio nuts on top. Garnish with silver warq. Keep aside to set.

Step 7

Cut into squares or diamonds, arrange on a serving plate and serve.
