Ingredients
- 4 cups raw mango, grated
- 1 cup red chilli powder
- ¾ cup salt
- 1 cup oil
- 1 teaspoon mustard seeds
- 1 cup garlic
- ½ teaspoon asafoetida
- 1½ teaspoons cumin seeds, roasted and powdered
- 1½ teaspoons fenugreek seeds, roasted and powdered
Method
- Place grated mangoes, red chilli powder and salt in a bowl and mix well. Heat oil in a non-stick pan. Add mustard seeds and allow them to splutter.
- Add garlic and asafoetida and mix well. Add grated mango, roasted cumin powder and roasted fenugreek powder and mix well.
- Store it in a dry bottle and allow it to mature for a day or two before using.
