Ingredients 

  • 4 cups raw mango, grated
  • 1 cup red chilli powder
  • ¾ cup salt
  • 1 cup oil
  • 1 teaspoon mustard seeds
  • 1 cup garlic
  •  ½ teaspoon asafoetida 
  • 1½ teaspoons cumin seeds, roasted and powdered
  • 1½ teaspoons fenugreek seeds, roasted and powdered

     

Method

  1. Place grated mangoes, red chilli powder and salt in a bowl and mix well. Heat oil in a non-stick pan. Add mustard seeds and allow them to splutter.
  2. Add garlic and asafoetida and mix well. Add grated mango, roasted cumin powder and roasted fenugreek powder and mix well.
  3. Store it in a dry bottle and allow it to mature for a day or two before using.
