If there is one vegetable that is truly a nutritional hero then it is bound to be the carrot. A goldmine of nutrients, this is the reason they can be even termed as worth the other ‘karat’ (as in gold)! Ranging in colours from orange, black, pink to red, yellow and white, this delicious vegetable is within the reach of rich and poor alike and is rightly called the universal root. The best role that this winter vegetable can play – chomp on one as it is an excellent snack!

Ingredients for Gajrela Recipe

  • Carrots grated 1 large

  • Milk 1 tablespoon

  • Raisins 1 tablespoon

  • Cashewnuts, roughly chopped 8-10

  • Milk 1 litre

  • Rice soaked and drained 4 tablespoons

  • Khoya/mawa 4 tablespoons

  • Sugar 1/4 cup

  • Green cardamom powder 1/4 teaspoon


Step 1

Heat ghee in a Nirlep non stick pan, add raisins, cashewnuts and sauté till light brown. Add carrot and mix. Add milk and cook for 15-20 minutes.

Step 2

Coarsely grind the soaked rice.Add khoya, sugar and green cardamom powder to the pan and cook for 4-5 minutes.Add the ground rice little by little, stirring continuously.

Step 3

Cook stirring continuously till the gajrela thickens. Take the pan off the heat, let the gajrela cool down to room temperature, then set in the refrigerator for 2 hours. Serve chilled.
