Ingredients list for Firni Falooda
- ¼ cup Rice soaked, drained well and coarsely ground
- 1½ litre Milk reduced till half
- 1 tablespoon Oil
- 10 Almonds thinly sliced
- a few saffron strands
- ¼ teaspoon Green cardamom powder
- 6 tablespoon Sugar
- 1 cup Falooda cooked
- 8 tbsps + Rose syrup
- 1 tbsp + t Khus syrup
Method
- Heat oil in a deep non-stick pan, add almonds and saute till lightly browned.
- Add 1 cup thickened milk to the ground rice and mix.
- Add 2 cups thickened milk, saffron and green cardamom powder to the pan and mix well.
- Add the rice paste and cook, on medium heat, stirring continuously, till the rice gets cooked and the mixture thickens.
- Add the remaining milk and mix well to correct the consistency. Transfer the phirni into a big bowl and stir continuously till it cools and no film forms on the surface.
- Add sugar and stir continuously till the sugar dissolves and phirni cools completely.
- Put falooda equally into serving glasses. Put 2 tbsps rose syrup over the falooda. Drizzle 1 tbspkhus syrup along the sides of the glasses.
- Put the phirni into the glasses, drizzle a little rose syrup and khus syrup on top and serve.
