Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Drumstick Curry Recipe

  • Drumsticks peeled and cut into 2 inch pieces 4

  • Coconut milk

  • Oil 2 tablespoons

  • Curry leaves 20

  • Onions sliced 2 medium

  • Curry powder 1 teaspoon

  • Thin coconut milk 1 1/2 cups

  • Salt to taste

  • Green chillies slit 4

  • Tamarind pulp 1 1/2 tablespoons

  • Fresh coriander leaves chopped 2 tablespoons

  • Thick coconut milk 1 cup

Method

Step 1

Heat oil in a deep pan, add curry leaves and onions and sauté till lightly browned. Add the drumsticks and stir. Add the curry powder and stir again. Add thin coconut milk, salt and green chillies. Stir and add half a cup of water.

Step 2

Cover and cook till the drumsticks are well cooked. Add tamarind pulp and mix. Add fresh coriander leaves and reduce the heat. Add thick coconut milk and let it heat through. Do not let it come to a boil.

Step 3

Serve hot.
