History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Dahi Chana Recipe

  • Yogurt (dahi) 1 1/2 cups

  • Chickpeas (kabuli chana) soaked overnight and boiled with salt 1 cup

  • Oil 1 1/2 tablespoons

  • Cumin seeds 1 teaspoon

  • Onion finely chopped 1 medium

  • Green chillies 3

  • Ginger-garlic paste 1 tablespoon

  • Turmeric powder 1/4 teaspoon

  • Garam masala powder 1 1/2 teaspoons

  • Salt to taste

  • A fresh coriander sprig for garnishing


Step 1

Heat oil in a non-stick pan, add cumin seeds and sauté for ½ minute. Add onion and sauté till it turns a light golden.

Step 2

Roughly chop green chillies and add along with ginger-garlic paste, mix and sauté for 1 minute.

Step 3

Add chickpeas and toss. Add yogurt and mix well. Mash a little with a hand blender and mix well. Cook for 1 minute.

Step 4

Add turmeric powder and garam masala powder and mix well. Add salt, mix well, cover and cook on medium heat for 10-12 minutes.

Step 5

Transfer into a serving dish and serve hot garnished with coriander sprig.
