The Maharashtrian hospitality is legendary. The cuisine has subtle variety and strong flavours and varies from region to region. In ancient times in the more affluent homes, feasts often started at mid-day and ended when the sun set! The presentation of food was alluring with a practice to sing sacred verses to dedicate the meal to God.
Maharashtrian cuisine covers a wide range from being extremely mild to very spicy dishes. Wheat, rice, jowar, vegetables, lentils and fruit form important components of Maharashtrian diet. 
Everybody knows about the unbeatable taste of the Mumbai’s chaats! But there is so much more to explore and savour in the other regions of Maharashtra.

Ingredients for DHAPATE - skk Recipe

  • Sorghum (jowar) flour 1W cup

  • Rice flour 1/2 cup

  • Whole wheat flour 1/4 cup

  • Gram flour 1/4 cup

  • Salt Gar; to taste

  • Turmeric powder 1/4 teaspoon

  • Garlic finely chopped 1 tablespoon

  • Medium onion finely chopped 1

  • Green paste (2 green chillies, 1 tsp cumin seeds and a handful 1 1/2 tablespoons

  • Yogurt 1/2 cup + to serve

  • Fresh coriander leaves chopped 1/4 cup

  • Oil as required

  • Banana leaves for platin

Method

Step 1

Take sorghum flour in a mixing bowl, add rice flour, wheat flour, gram flour, salt, turmeric powder, garlic, onion, green paste, yogurt and coriander leaves and mix well. Add a little water and knead into a soft dough.

Step 2

Heat a non-stick tawa.

Step 3

Divide the dough into equal large lemon sized portions. Place a plastic sheet on the worktop, drizzle a little oil over and spread, place each dough ball on it, dampen your hand with water and gently tap the dough to flatten it into a thick roundel.

Step 4

Place the roundel on the hot tawa and cook for 1 minute. Flip and drizzle a little oil all around and flip again. Drizzle a little oil on the other side too and cook for 5-6 minutes over medium heat till golden brown specs appear on both sides.

Step 5

Transfer prepared dhapates on a banana leaf lined serving plate and serve hot with yogurt.
