Ingredients list for Curried Chicken Rice
- 1 tablespoon Curry powder
- 100 grams Boneless chicken cut into juliennes
- 2 cups Rice boiled
- 1 tablespoon Oil
- 8-10 Garlic cloves chopped
- 1 medium Onion chopped
- 2 Fresh red chillies
- to taste Salt
- 1 teaspoon Soy sauce
- as required Chicken stock
- 8-10 Fresh coriander stems
- 2 tablespoons Fresh coriander leaves chopped
- for garnishing Fresh coriander sprigs
Method
- Heat oil in a non-stick wok. Add garlic and sauté well. Add onion and sauté for a minute.
- Chop red chillies and too the pan and sauté for a minute. Add curry powder and sauté for a minute.
- Add chicken and sauté for 2 minutes. Add salt, soy sauce, mix well and cook.
- Add 2 tablespoons chicken stock, mix well and cook till the stock is absorbed.
- Chop coriander stems and add along with rice. Toss well.
- Add chopped coriander and toss well.
- Garnish with coriander sprig and serve hot.
