Cucumber and Moong Salad

This salad is a refreshing and nutritious dish perfect for a light meal. Blanched green gram (moong beans) is sautéed with garlic and a blend of spices including red chili powder, black pepper, chaat masala, and roasted cumin powder for a burst of flavor.

Ingredients 

  • 3 medium cucumbers, peeled
  • 2 cups whole green gram, blanched
  • 1 tablespoon oil
  • 1 tablespoon finely chopped garlic 
  • ¼ teaspoon red chilli powder
  • ¼ teaspoon black pepper powder
  • ½ teaspoon chaat masala
  • ½ tsp roasted cumin powder + to sprinkle
  • Salt to taste
  • Juice of 1 lemon

For serving

  • A few iceberg lettuce leaves

Method

  1. Heat oil in a non-stick pan. Add garlic and sauté till golden.
  2. Add sprouted moong, red chilli powder, black pepper powder, chaat masala, roasted cumin powder and salt.
  3. Switch off the heat and mix well. Transfer into a bowl. Grate cucumbers into the bowl. Add lemon juice and mix well.
  4. Place iceberg lettuce leaves in a serving plate and transfer the salad over them. Sprinkle some roasted cumin powder and serve.
