When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Cuban Spiced Chicken with Pineapple Salsa Recipe

  • Boneless Chicken 4

  • Pineapple peeled, cored and chopped 1 medium

  • Salt to taste

  • Clove powder 1/2 teaspoon

  • Cumin powder 2 teaspoons

  • Crushed black peppercorns 2 teaspoons

  • Lemon juice 3 tablespoons

  • Green chillies 2

  • Fresh coriander leaves 1/2 cup

  • Garlic cloves 1

  • Oil 2 tablespoons

  • Spring onion greens chopped 2 tablespoons


Step 1

Make some slashes on the chicken breasts. Sprinkle some salt, some clove powder, some cumin powder, some crushed peppercorns and 2 tbsps lemon juice. Sprinkle some more crushed peppercorns, cumin powder and clove powder.

Coarsely grind half the pineapple with green chillies, coriander leaves, garlic, 1 tbsp lemon juice and salt. Heat oil on a non stick grill pan and place the chicken breasts on it masala side facing downwards. Sprinkle the remaining masalas on the other s

Cook till the underside is done and grill marks appear. Turn them over and cook the other side similarly. Transfer the ground pineapple into a bowl. Add the remaining pineapple and spring onion greens and mix.

Step 4

Transfer salsa into a serving plate. Place the chicken breasts over the salsa and serve immediately.
