Ingredients list for Cuban Spiced Chicken with Pineapple Salsa
- 4 Boneless Chicken
- 1 medium Pineapple peeled, cored and chopped
- to taste Salt
- 1/2 teaspoon Clove powder
- 2 teaspoons Cumin powder
- 2 teaspoons Crushed black peppercorns
- 3 tablespoons Lemon juice
- 2 Green chillies
- 1/2 cup Fresh coriander leaves
- 1 Garlic cloves
- 2 tablespoons Oil
- 2 tablespoons Spring onion greens chopped
Method
- Make some slashes on the chicken breasts. Sprinkle some salt, some clove powder, some cumin powder, some crushed peppercorns and 2 tbsps lemon juice.
Sprinkle some more crushed peppercorns, cumin powder and clove powder. - Coarsely grind half the pineapple with green chillies, coriander leaves, garlic, 1 tbsp lemon juice and salt. Heat oil on a non stick grill pan and place the chicken breasts on it masala side facing downwards. Sprinkle the remaining masalas on the other s
- Cook till the underside is done and grill marks appear. Turn them over and cook the other side similarly. Transfer the ground pineapple into a bowl. Add the remaining pineapple and spring onion greens and mix.
- Transfer salsa into a serving plate. Place the chicken breasts over the salsa and serve immediately.
