Ingredients list for Crunchy Coriander Pomfret

  • 2 tablespoons Coriander Seeds
  • 1/2 cup Pomfret chopped
  • 2 medium Pomfret fillets boneless
  • to taste Salt
  • 1/4 teaspoon White pepper powder
  • 1 tablespoon Lemon juice
  • 8-10 Black peppercorns
  • 3-4 Dried red chillies
  • 1/4 teaspoon Dried thyme
  • for shallow frying Oil
  • 1 tablespoon Cornflour/ corn starch
  • 4 tablespoons Refined flour (maida)

Method

  1. Cut each fillet into eight pieces. Marinate the fish fillets with salt, pepper powder and lemon juice for about half an hour. Dry roast the coriander seeds, peppercorns and red chillies till fragrant. Grind to a coarse powder.
  2. Add thyme to this spice-mix. Heat sufficient oil in a non stick frying pan. In a bowl mix the spice powder, coriander leaves, cornflour and refined flour.
  3. Coat the marinated fillets with the mixture and shallow fry on both sides until golden brown and crisp. Drain on an absorbent paper and serve hot.
