Ingredients list for Creamy Cajun Potatoes

  • 12-16 Baby potatoes , parboiled with skin
  • to deep fry Oil
  • 2 tablespoons Mayonnaise
  • 1 teaspoon Dried oregano
  • 1 teaspoon Red chilli flakes
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried parsley
  • 1 teaspoon Dried thyme
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika powder
  • to taste Salt
  • to garnish Onion , finely chopped
  • to garnish Fresh parsley , finely chopped


  1. Heat sufficient oil in a pan.
  2. Lightly press baby potatoes between palms, place on a plate. Add these to the hot oil and deep-fry till golden-brown. Drain on absorbent paper.
  3. Heat mayonnaise in another non-stick pan, add oregano, chilli flakes, basil, parsley, thyme, garlic powder, onion powder, paprika powder and salt and mix well. Add 2 tablespoons water and mix once again.
  4. Add fried baby potatoes, mix and remove the pan from heat.
  5. Transfer into a serving platter, garnish with onions and fresh parsley and serve hot.
