Ingredients
- 10-12 baby potatoes, parboiled with skin
- Oil for deep-frying
- 2 tablespoons mayonnaise
- 1 teaspoon dried oregano
- 1 teaspoon dried chilli flakes
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt to taste
- Finely chopped onion for garnishing
- Finely chopped parsley for garnishing
Method
- Lightly press baby potatoes between palms, place on a plate and set aside.
- Heat sufficient oil in a pan. Deep-fry baby potatoes till golden-brown. Drain on absorbent paper.
- Heat mayonnaise in another non-stick pan. Add oregano, chilli flakes, basil, parsley, thyme, garlic powder, onion powder, paprika powder, salt and mix well. Add 2 tablespoons water and mix once again.
- Add fried baby potatoes, mix and remove from heat.
- Serve hot garnished with chopped onions and parsley.
