Corn Paneer Delight

Corn kernels and cottage cheese pieces cooked with onions, tomatoes and basic Indian spices. Serve this with hot chapatis. This is Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 2 cups corn kernels, blanched
  • 200 grams paneer, cut into ½ inch cubes
  • 2 tablespoons oil
  • 2 medium onions, chopped
  • 1/4 teaspoon red chilli powder
  • 1 teaspoon coriander powder
  • Salt to taste
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon turmeric powder
  • 2 medium tomatoes, chopped
  • 2 tablespoons chopped fresh coriander leaves 

Method

  1. Heat oil in a non stick pan oil add onions and saute till light brown.
  2. Add red chilli powder, coriander powder, salt, garam masala, turmeric powder and saute for a minute.
  3. Add tomatoes and saute till oil surfaces. Add capsicum, corns and let it cook for five minutes.
  4. Add paneer saute for a minute and remove from flame.
  5. Serve hot garnished with chopped coriander.
