Ingredients
- 1 1/2 cup sweet corn kernels, boiled and drained
- 1 1/2 cup red kidney beans, boiled
- 2 spring onions
- Salt to taste
- Black pepper powder to taste
For dressing
- 2 tablespoons mayonnaise
- 3/4 tablespoon mustard paste
- 2 tablespoons tomato ketchup
- 1/2 teaspoon paprika
Method
- Chop the spring onion bulbs and greens separately. Mix all the ingredients for the dressing with a small wire whisk. Place in a refrigerator to chill.
- Toss the corn, kidney beans and spring onion bulbs in a large bowl.
- Pour the dressing over and season with salt and pepper to taste. Sprinkle with the spring onion greens and serve immediately.
