Corn And Bean Twosome

Ingredients 

For dressing

  • 2 tablespoons mayonnaise
  • 3/4 tablespoon mustard paste
  • 2 tablespoons tomato ketchup
  • 1/2 teaspoon paprika

Method

  1. Chop the spring onion bulbs and greens separately. Mix all the ingredients for the dressing with a small wire whisk. Place in a refrigerator to chill.
  2. Toss the corn, kidney beans and spring onion bulbs in a large bowl.
  3. Pour the dressing over and season with salt and pepper to taste. Sprinkle with the spring onion greens and serve immediately.
