Club Sandwich

A classic, indulgent club sandwich featuring layers of crispy bacon, tender chicken, fried eggs, fresh veggies, and melted cheese, all stacked between golden, buttered toast. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 12 brown bread slices
  • 24-32 bacon strips
  • 8 tablespoons oil
  • 4 boneless chicken breasts cut into cubes
  • 8 eggs
  • Salt to taste
  • Crushed black peppercorns to taste
  • 4 teaspoons mustard sauce
  • 8 tablespoons mayonnaise
  • 8-12 lettuce leaves
  • 2 medium tomatoes sliced into roundels
  • 8 cheese slices
  • French fries to serve
  • Tomato ketchup to serve

Method

  1. Heat a non-stick pan, add bacon strips and cook them, turning sides, till they become crisp and shrink. Transfer into a bowl.
  2. Heat 4 tablespoons of oil in another non-stick pan and add chicken, cook on both sides till done. Transfer into another bowl.
  3. For each sandwich, heat 1 tbsp oil in a yet another non-stick pan and break 2 eggs in it. Sprinkle salt and pepper. Flip and cook from both sides till done. Transfer to a plate. Repeat with the remaining eggs.
  4. Apply butter on the bread slices and toast them on both sides on a non-stick pan till crisp and golden.
  5. Add salt, black pepper and mustard sauce to the chicken. Mix well, set aside.
  6. Apply mayonnaise on a toasted bread slice, tear a lettuce leaf and place on top, place 6-8 bacon slices over it, place 2-3 tomato slices and cover with a cheese slice. Place another bread slice over it and apply mayonnaise on it, place the prepared egg on the bread, top with some chicken and another cheese slice. Apply mayonnaise on a third toasted bread slice, turn it over and cover the sandwich.
  7. Secure the club sandwich with decorative toothpicks and cut in half. Make the remaining sandwiches similarly.
  8. Remove the toothpicks and serve with French fries and tomato ketchup.
