Ingredients list for Cinnamon and Vanilla Pancakes with Poached Strawbe
- 1 cup Refined flour (maida)
- 10 Strawberries halved
- cup Castor sugar 1/8 cup + ½
- 1/2 teaspoon Salt
- 1/4 teaspoon Cinnamon powder
- 1 teaspoon Baking powder
- 3/4 cup Milk
- 1 Egg lightly whisked
- 1 teaspoon Vanilla essence
- 1 tablespoon Butter melted
- for shallow frying Butter
Method
- Heat a non-stick pan; add strawberries and ⅛ cup castor sugar. Stir and bring to a boil, lower heat and simmer for 25 minutes. Set aside.
- In a bowl sift together flour, sugar, salt, cinnamon and baking powder.
- Make a well and add milk, egg, vanilla essence, 1 tablespoon melted butter and 1 teaspoon hot water. Whisk until a smooth batter is formed.
- Heat butter in a non-stick pan. Pour ladleful of batter in it and spread into small roundels. These are pikelets. Cook them till both sides are golden.
- Serve with poached strawberries.
