Ingredients list for Chinese Style Vegetable Claypot Rice
- 1 1/2 cups Short grain rice , soaked for 1 hour and drained
- 2 tablespoons Olive oil
- 2 medium Onions , peeled
- 2 medium Carrots
- 1 1/2 tablespoons Ginger , grated
- 1 1/2 tablespoons Garlic , grated
- 1 cup Button mushrooms , halved
- to taste Salt
- 1 teaspoon Soy sauce
- 3 cups Vegetable stock
- 1/2 teaspoon Black pepper powder
- 1 teaspoon Sesame oil (til oil)
Method
- Heat olive oil in a deep pan. Roughly chop onions and add and sauté.
- Cut carrots into medium sized pieces and add. Add ginger and garlic, mix well and continue to sauté.
- Preheat oven to 160° C.
- Add button mushrooms, mix well and sauté for 2 minutes. Add salt, soy sauce and vegetable stock and mix well. Add rice and pepper powder and mix. Cover and cook on low heat till half done.
- Transfer the mixture into a claypot. Add sesame oil and cover, keep the clay pot in the preheated oven and cook for 25-30 minutes or till the rice is completely cooked. Let it remain in the oven for some time.
- If you want to cook in the Microwave oven, cook at HIGH for 6-7 minutes and let it remain in the oven for some time. Ensure that the mixture remains moist.
- Transfer onto a serving platter and serve hot.
