Ingredients list for Chinese Chicken Sausage Rice
- 200 grams Boneless chicken cut into cubes
- 2-3 Chicken sausages sliced
- 1½ cups Basmati rice soaked for 30 minutes
- 2 tablespoons Sesame oil (til oil)
- 1 tablespoon Garlic chopped
- 1 medium Onion finely chopped
- 1 tablespoon Cornflour
- 4 cups Chicken stock
- to taste Salt
- to taste Crushed black peppercorns
- 5-6 Button mushrooms sliced
- 1 tablespoon Oyster sauce
- 2-3 teaspoons Soy sauce
- 1 teaspoon Vinegar
- to serve Fried noodles
Method
- Heat sesame oil in a non-stick pan. Add garlic and sauté till golden. Add onion and sauté on high heat till golden.
- Add chicken, mix and cook on high heat for 1-2 minutes. Add drained rice, mix and cook for 1 minute. Reduce heat and cook for 1-2 minutes.
- Take cornflour in a bowl. Add ¼ cup stock and mix well to make a smooth slurry.
- Heat remaining stock in a microwave for 1 minute.
- Add salt and crushed peppercorns to rice mixture and mix. Add remaining chicken stock, mix, cover and cook on medium heat for 5 minutes or till rice is halfdone.
- Add chicken sausage and mushrooms and mix. Add oyster sauce and soy sauce, mix, cover and cook for 5 minutes or till the rice is done.
- Add slurry and vinegar, mix, cover and cook for 1 minute.
- Serve hot with fried noodles.
