Ingredients
- 10-15 idlis, quartered
- 2-3 green chillies, finely chopped
- 2 tablespoons cornflour
- 1/2 tablespoon oil +to deep fry
- 1 tablespoon chopped garlic
- 1/2 tablespoon chopped ginger
- 1 small onion, quartered and layers separated
- 1 small red capsicum, cut into squares
- 1 small yellow capsicum, cut into squares
- 1 tablespoon soy sauce
- 1 tablespoon red chilli sauce
- 3/4 cup vegetable stock
- Salt to taste
- Crushed black peppercorns to taste
- 1 tablespoon cornflour slurry
- Spring onion greens diagonally sliced for garnish
Method
- Heat sufficient oil in kadai.
- Take idli pieces in a bowl, add cornflour and mix well. Deep-fry the idli pieces till lightly brown. Drain on absorbent paper.
- Heat 1 tablespoon oil in a non-stick pan. Add garlic, ginger and green chillies and sauté till fragrant.
- Add onions, red and yellow capsicums, mix and cook for 2-3 minutes.
- Add soy sauce and chilli sauce and mix well. Add stock, mix and bring to a boil.
- Add salt and crushed peppercorns and mix well. Add cornflour slurry and mix well. Add fried idli pieces, mix well and cook for a minute.
- Garnish with spring onion greens and serve hot.
