Chilli Garlic Chicken Rice

Ingredients list for Chilli Garlic Chicken Rice

  • 200 grams Boneless chicken cut into 1 cm pieces
  • 8 cloves Garlic chopped
  • 1 tablespoon Red chilli paste
  • 2 cups Cooked basmati rice
  • to taste Salt
  • 1 tablespoon Soy sauce
  • 2 tablespoons Cornflour/ corn starch
  • 4 tablespoons Oil
  • 1 inch piece Ginger chopped
  • 1 inch stalk Celery chopped
  • 3 tablespoons Tomato ketchup
  • 1 teaspoon Red chilli sauce
  • 3 cups Chicken stock
  • 1 medium Onion chopped
  • 1 small Green capsicum cut into small pieces
  • 1 small Red capsicum cut into small pieces

Method

  1. Add chilli paste, salt and half tablespoon soy sauce to the chicken pieces and mix.
  2. Add one tablespoon cornflour and mix well.
  3. Heat one and a half tablespoons oil in a non-stick pan.
  4. Add chicken pieces and shallow fry, turning sides, till done.
  5. Heat one and a half tablespoons oil in another non-tick pan.
  6. Add garlic, ginger and celery and sauté for one minute.
  7. Add the tomato ketchup, chilli sauce and the remaining soy sauce and stir.
  8. Add the stock and let the mixture simmer.
  9. Mix the remaining cornflour with one-fourth cup water and add to the sauce.
  10. Add the chicken pieces and let it simmer for a couple of minutes.
  11. Heat the remaining oil in a non-stick pan and sauté onion, green capsicum and red capsicum till well glazed.
  12. Place rice in individual bowls and heat them in the microwave for one minute.
  13. Place the chicken with the sauce over the rice.
  14. Garnish with sautéed onion, green and red capsicums and serve immediately.
