Be a kid or a teenage or an adult or an oldie, chicken lovers trend all over the world at all times! One meat that is a favourite of all beyond belief! When cooked, it can be presented in many guises. Sauté it, fry it, toss it, bake it, steam it – eat it the way you want to. Whatever its form may be upon being cooked, its flavour may change but its flesh remains high in protein, low in fat and can be digested easily.

Ingredients for Chilli Garlic Chicken Rice Recipe

  • Boneless chicken cut into 1 cm pieces 200 grams

  • Garlic chopped 8 cloves

  • Red chilli paste 1 tablespoon

  • Cooked basmati rice 2 cups

  • Salt to taste

  • Soy sauce 1 tablespoon

  • Cornflour/ corn starch 2 tablespoons

  • Oil 4 tablespoons

  • Ginger chopped 1 inch piece

  • Celery chopped 1 inch stalk

  • Tomato ketchup 3 tablespoons

  • Red chilli sauce 1 teaspoon

  • Chicken stock 3 cups

  • Onion chopped 1 medium

  • Green capsicum cut into small pieces 1 small

  • Red capsicum cut into small pieces 1 small


Step 1

Add chilli paste, salt and half tablespoon soy sauce to the chicken pieces and mix.

Step 2

Add one tablespoon cornflour and mix well.

Step 3

Heat one and a half tablespoons oil in a non-stick pan.

Step 4

Add chicken pieces and shallow fry, turning sides, till done.

Step 5

Heat one and a half tablespoons oil in another non-tick pan.

Step 6

Add garlic, ginger and celery and sauté for one minute.

Step 7

Add the tomato ketchup, chilli sauce and the remaining soy sauce and stir.

Step 8

Add the stock and let the mixture simmer.

Step 9

Mix the remaining cornflour with one-fourth cup water and add to the sauce.

Step 10

Add the chicken pieces and let it simmer for a couple of minutes.

Step 11

Heat the remaining oil in a non-stick pan and sauté onion, green capsicum and red capsicum till well glazed.

Step 12

Place rice in individual bowls and heat them in the microwave for one minute.

Step 13

Place the chicken with the sauce over the rice.

Step 14

Garnish with sautéed onion, green and red capsicums and serve immediately.
