Ingredients list for Chilli Garlic Chicken Rice
- 200 grams Boneless chicken cut into 1 cm pieces
 - 8 cloves Garlic chopped
 - 1 tablespoon Red chilli paste
 - 2 cups Cooked basmati rice
 - to taste Salt
 - 1 tablespoon Soy sauce
 - 2 tablespoons Cornflour/ corn starch
 - 4 tablespoons Oil
 - 1 inch piece Ginger chopped
 - 1 inch stalk Celery chopped
 - 3 tablespoons Tomato ketchup
 - 1 teaspoon Red chilli sauce
 - 3 cups Chicken stock
 - 1 medium Onion chopped
 - 1 small Green capsicum cut into small pieces
 - 1 small Red capsicum cut into small pieces
 
Method
- Add chilli paste, salt and half tablespoon soy sauce to the chicken pieces and mix.
 - Add one tablespoon cornflour and mix well.
 - Heat one and a half tablespoons oil in a non-stick pan.
 - Add chicken pieces and shallow fry, turning sides, till done.
 - Heat one and a half tablespoons oil in another non-tick pan.
 - Add garlic, ginger and celery and sauté for one minute.
 - Add the tomato ketchup, chilli sauce and the remaining soy sauce and stir.
 - Add the stock and let the mixture simmer.
 - Mix the remaining cornflour with one-fourth cup water and add to the sauce.
 - Add the chicken pieces and let it simmer for a couple of minutes.
 - Heat the remaining oil in a non-stick pan and sauté onion, green capsicum and red capsicum till well glazed.
 - Place rice in individual bowls and heat them in the microwave for one minute.
 - Place the chicken with the sauce over the rice.
 - Garnish with sautéed onion, green and red capsicums and serve immediately.
