Ingredients list for Chicken With Orange And Figs In Barbecue Sauce
- 800 grams Chicken
- 2 Oranges
- 8 Figs
- 4 tablespoons Butter
- FOR SAUCE
- 2 tablespoons Oil
- 1 medium Onion chopped
- 6 cloves Garlic crushed
- 1 teaspoon Worcestershire sauce
- 2 teaspoons English mustard powder
- 1/2 cup Tomato ketchup
- 1/2 teaspoon Red chilli flakes
- 1/2 teaspoon Peppercorns freshly ground
- to taste Salt
- 2 tablespoons Sugar
Method
- Cut the chicken into eight pieces. Cut the oranges into six segments each. Soak the figs in water for some time.
- Heat oil in a saucepan and add chopped onions, crushed garlic, Worcestershire sauce, mustard powder and tomato ketchup. Add red chilli flakes and freshly ground peppercorns and stir.
- Remove from heat. Add salt and sugar and mix well. Cool the marinade. Add the marinade to the chicken and figs and let it stand for about an hour.
- Take the skewers and thread an orange segment, a chicken piece, a fig and continue in this order.
- Press them a little and arrange them on the barbecue. Baste them with butter occasionally and when they turn brown and the chicken is cooked it is ready to be served.
