Ingredients list for Chicken Thai Rice
- 250 grams Chicken mince
- 1 tablespoon Thai green curry paste
- 2 cups Jasmine rice cooked
- 1 tablespoon Oil
- 7-8 Garlic cloves
- 1 teaspoon Fresh red chillies chopped
- 1 medium Onion sliced
- to taste Salt
- to taste Crushed black peppercorns
- ½ cup Coconut milk
- for garnish fried basil leaves
Method
- Heat oil in a non-stick wok.
- Slice garlic, add to pan and sauté till golden. Add fresh red chillies and onion, mix and sauté till onion turns golden.
- Add Thai green curry paste and mix well. Add chicken mince and salt, mix well and cook for 2-3 minutes.
- Add rice and crushed peppercorns, mix and cook for a minute. Add coconut milk and some water, mix, cover and cook on low heat for 2-3 minutes.
- Serve hot garnished with fried basil leaves.
