Ingredients list for Chicken Salona
- 800 grams Chicken cut into 1 inch pieces on the bone
- Potato
- 2 tablespoons Oil
- 3 medium Onions coarsely chopped
- 2 medium Potatoes cut into cubes
- 4 Green chillies cut into ¼ inch pieces
- 3 cloves Garlic crushed
- 2 small Yellow Zucchini peeled and cut into thick slices
- 2 medium Eggplants/ brinjals peeled and cut into cubes
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Coriander powder
- 1 teaspoon Curry powder
- to taste Salt
- 1 Dried lemon halved
- 1/4 cup Tomato puree
- 2 cups Chicken stock
- 1 medium Green capsicum diced
Method
- Heat the oil in a deep non stick pan.
- Add onions and sauté till golden. Add the potatoes, green chillies and garlic and stir. Sauté for two minutes and then add the zucchini, eggplants and stir. Sauté for two minutes.
- Add the turmeric powder, coriander powder and curry powder and mix. Add the chicken, salt and the dried lemon halves and stir. Add tomato puree and mix. Add the chicken stock or water and mix. When it comes to a boil, add green capsicum and stir.
- Cover and cook on medium heat for half an hour.
- Serve hot.
