Ingredients list for Chicken Burnt Garlic Rice
- 100 grams Boneless chicken cut into small cubes
- 10-12 Garlic cloves chopped
- 5-6 Garlic cloves
- 2 1/2 cups Cooked rice
- 1 1/2 tablespoons Oil
- 1 medium Onion finely chopped
- 1 teaspoon Crushed black peppercorns
- 1 teaspoon Red chilli flakes
- to taste Salt
- 1/2 teaspoon Soy sauce
- 5-6 stalks Spring onion greens chopped
- 1 teaspoon Vinegar
Method
- Heat 1 tablespoon oil in a non-stick pan. Add chopped garlic, onion and sauté for 1 minute.
- Add chicken cubes, mix and sauté for 3-4 minutes.
- Add ½ teaspoon crushed peppercorns, ½ teaspoon red chilli flakes and salt and sauté for 1 minute.
- Add rice, mix and sauté for 1 minute. Add salt, remaining crushed peppercorns and remaining red chilli flakes.
- Heat remaining oil in another non-stick pan. Slice garlic cloves, add and sauté till golden.
- Reserve some sautéed sliced garlic for garnishing and add the remaining to the rice. Add soy sauce, mix well and sauté for 1 minute.
- Add spring onion greens, mix and sauté for 1 minute.
- Add vinegar and mix well. Serve hot.
