Ingredients list for Cheesy Paneer Papdi
- as required Mozzarella cheese
- 70 grams Paneer (cottage cheese) small cubes
- 16 Papdis
- 1 tablespoon Oil
- 1 tablespoon Garlic chopped
- 1 teaspoon Cumin seeds
- 1 small Onion finely chopped
- to taste Salt
- 1 tablespoon Green chutney
- to taste Crushed black peppercorns
- 16 Cherry tomatoes roundels
- for garnish coriander sprig
Method
- Preheat oven to 180° C.
- Heat oil in a non-stick pan. Add garlic and sauté for 30 seconds. Add cumin seeds and sauté for 30 seconds.
- Add onion and sauté. Add salt and sauté till onion turns translucent. Add green chutney and sauté for 1 minute.
- Add cottage cheese, mix and cook for 1 minute. Add crushed peppercorns and mix.
- Put some cottage cheese mixture in the centre of each papdi and grate some mozzarella cheese on top. Place them on a baking tray.
- Place the baking tray in the preheated oven and bake till cheese melts.
- Place papdis in small individual serving plates and place one cherry tomato roundel on the side.
- Serve immediately garnished with fresh coriander sprigs.
