Cauliflower Koshimbir

Steamed grated cauliflower tossed with fresh coconut, coriander, and a tangy lemon dressing, finished with a mustard seed tempering. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 medium cauiliflower, grated
  • 1 tablespoon chopped fresh coriander leaves 
  • 1 tablespoon scraped fresh coconut
  • 2 tablespoons lemon juice
  • 1/2 teaspoon sugar
  • 2 tablespoons oil
  • 1/2 teaspoon mustard seeds
  • A pinch of asafoetida

Method

  1. Steam grated cauliflower. Cool it. Mix all the ingredients. Heat oil in a pan. Add mustard seeds. When they splutter, add asafoetida and add this tempering to the cauliflower mixture. Mix and serve.
