Ingredients list for Cashew Chicken
- 1/2 cup Cashewnuts roasted
- 4 Boneless chicken breast
- 4 medium Onion
- 4-5 Dry red chilies
- 10-12 cloves Garlic
- 4 tablespoons Oil
- 1/2 Red capsicums
- 3 teaspoon Oyster sauce
- 1 teaspoon Dark soy sauce
- 1/2 teaspoon Sugar
- to taste Salt
- 1 teaspoon Cornflour/ corn starch
Method
- Cut onions into large chunks and separate layers. Chop red chillies and garlic coarsely in a chopper.
- Heat 2 tsps oil in a non-stick wok, add onions and sauté. Cut red capsicum into ½ inch pieces and add.
- Add cashewnuts and toss. Transfer the mixture into a bowl and set aside.
- Heat 2 tsps oil in the non-stick wok. Cut chicken into ½ inch pieces and add.
- Sauté on high heat for 2-3 minutes, tossing frequently so that they get cooked evenly all over.
- Add chilli-garlic mixture and toss. Add oyster sauce, dark soy sauce, sugar and salt and mix.
- Cook for 2 minutes. Mix cornflour in ¼ cup water and add to the wok and mix well.
- Add the onions-red capsicum-cashewnut mixture and mix. Serve hot.
