Carrot and Raisin Salad

A creamy carrot salad with raisins and orange segments, dressed in a tangy mayonnaise and cream mix, chilled and garnished with parsley. This is a Sanjeev Kapoor exclusive recipe.

Ingredients

  • 2 cups grated carrots 
  • ½ cup black raisins
  • ½ cup mayonnaise
  • ½ cup fresh cream
  • 1 tablespoon powdered sugar
  • 2 tablespoons lemon juice
  • Salt to taste
  • Black pepper powder to taste
  • 1 orange, separated into segments
  • Parsley sprigs for garnishing

Method

  1. Boil ½ cup water in a non-stick pan.
  2. Take raisins in a bowl. Add boiled water and set aside for 5 minutes. Drain.
  3. To make dressing, put mayonnaise, cream, sugar, lemon juice, salt and pepper powder in another bowl. Whisk well and set aside.
  4. Put carrot, orange segments and drained raisins in a third bowl. Mix well and add dressing. Mix again and refrigerate for 20 minutes.
  5. Garnish with parsley sprig and serve chilled.
