Ingredients
- 2 cups grated carrots
- ½ cup black raisins
- ½ cup mayonnaise
- ½ cup fresh cream
- 1 tablespoon powdered sugar
- 2 tablespoons lemon juice
- Salt to taste
- Black pepper powder to taste
- 1 orange, separated into segments
- Parsley sprigs for garnishing
Method
- Boil ½ cup water in a non-stick pan.
- Take raisins in a bowl. Add boiled water and set aside for 5 minutes. Drain.
- To make dressing, put mayonnaise, cream, sugar, lemon juice, salt and pepper powder in another bowl. Whisk well and set aside.
- Put carrot, orange segments and drained raisins in a third bowl. Mix well and add dressing. Mix again and refrigerate for 20 minutes.
- Garnish with parsley sprig and serve chilled.
