Ingredients 

  • 3 medium carrots, grated
  • 2 medium apples, cored and sliced
  • 3/4 tablespoon lemon juice
  • 3/4 tablespoon charoli/chironji
  • 2 tablespoons raisins
  • 6-8 cashewnuts, deep fried

For dressing

  • 3 tablespoons salad oil
  • 2 tablespoons lemon juice
  • A pinch of sugar
  • Salt to taste
  • 5-6 black peppercorns, freshly ground

Method

  1. Sprinkle the apple slices with the lemon juice to prevent discolouration.
  2. Place the grated carrots in a large bowl. Add the apple, charoli, raisins and fried cashew nuts.
  3. Place all the ingredients for the dressing in a small glass jar and shake well to mix. Pour the dressing over the salad and toss lightly. Serve immediately.
