Ingredients
- 3 medium carrots, grated
- 2 medium apples, cored and sliced
- 3/4 tablespoon lemon juice
- 3/4 tablespoon charoli/chironji
- 2 tablespoons raisins
- 6-8 cashewnuts, deep fried
For dressing
- 3 tablespoons salad oil
- 2 tablespoons lemon juice
- A pinch of sugar
- Salt to taste
- 5-6 black peppercorns, freshly ground
Method
- Sprinkle the apple slices with the lemon juice to prevent discolouration.
- Place the grated carrots in a large bowl. Add the apple, charoli, raisins and fried cashew nuts.
- Place all the ingredients for the dressing in a small glass jar and shake well to mix. Pour the dressing over the salad and toss lightly. Serve immediately.
