Ingredients list for Cantonese Chicken
- 250 grams Boneless chicken cut into thin strips
- 1 tablespoon Oil
- 1 cup Noodles boiled
- 1 cup Bean sprouts
- 2-3 stalks Spring onion greens chopped
- 1 tablespoon Soy sauce
- to taste Salt
- 1 teaspoon Black pepper powder
- 1 tablespoon Garlic minced
- 1 inch Ginger cut into juliennes
- 1 teaspoon Vinegar
- 1/2 teaspoon Sugar
- 1 1/2 tablespoons Cornstarch
- 1 cup Chicken stock
Method
- Heat ½ tablespoon oil in a non-stick wok. Add noodles and sauté for half a minute. Add bean sprouts and mix. Add spring onion greens, soy sauce and mix well.
- Add salt and ½ teaspoon pepper powder and mix well. Cook for a minute.
- Heat remaining oil in another non-stick wok. Add garlic and sauté till lightly browned. Add chicken strips, mix and cook on high heat till chicken changes colour.
- Add remaining pepper powder and salt and mix well. Add ginger juliennes and mix well.
- Add vinegar and mix. Add sugar, mix well and simmer for a minute.
- Take cornstarch in a bowl. Add chicken stock and mix well into a smooth slurry.
- Add slurry to the chicken and mix well. Increase heat and cook till the sauce thickens and chicken is fully cooked.
- Transfer chicken in a serving dish. Top with noodle-sprout mixture and serve immediately.
