Ingredients list for Cajun Spiced Mutton Piccata

  • 500 grams Boneless mutton cut into 1½ -2 inch pieces
  • 1-2 Rosemary sprigs
  • 2 tablespoons Cajun spice
  • to taste Crushed black peppercorns
  • to taste Salt
  • 2-3 tablespoons Oil
  • 1 medium Carrot peeled and chopped
  • 2 tablespoons Celery chopped
  • 1 medium Onion chopped


  1. Line a worktop with a cling film. Place each mutton piece on top, cover with the film and flatten them using a steel hammer. Place them in a bowl.
  2. Add Cajun spice, crushed peppercorns, salt and 1-2 tablespoons oil to flattened mutton pieces and mix. Add torn rosemary sprigs and mix well. Set aside to marinate for 10-15 minutes.
  3. Preheat oven to 180° C.
  4. Heat remaining oil in a non-stick pan. Place marinated mutton pieces and cook, turning sides, till light golden but half cooked on both sides. Transfer onto a plate.
  5. Spread carrots, celery and onion on a baking tray and mix well. Sprinkle some salt and crushed peppercorns on top and place half cooked mutton pieces.
  6. Place the baking tray in the preheated oven and bake for 20-25 minutes.
  7. Serve hot.
