Ingredients list for Cajun Spiced Mutton Piccata
- 500 grams Boneless mutton cut into 1½ -2 inch pieces
- 1-2 Rosemary sprigs
- 2 tablespoons Cajun spice
- to taste Crushed black peppercorns
- to taste Salt
- 2-3 tablespoons Oil
- 1 medium Carrot peeled and chopped
- 2 tablespoons Celery chopped
- 1 medium Onion chopped
Method
- Line a worktop with a cling film. Place each mutton piece on top, cover with the film and flatten them using a steel hammer. Place them in a bowl.
- Add Cajun spice, crushed peppercorns, salt and 1-2 tablespoons oil to flattened mutton pieces and mix. Add torn rosemary sprigs and mix well. Set aside to marinate for 10-15 minutes.
- Preheat oven to 180° C.
- Heat remaining oil in a non-stick pan. Place marinated mutton pieces and cook, turning sides, till light golden but half cooked on both sides. Transfer onto a plate.
- Spread carrots, celery and onion on a baking tray and mix well. Sprinkle some salt and crushed peppercorns on top and place half cooked mutton pieces.
- Place the baking tray in the preheated oven and bake for 20-25 minutes.
- Serve hot.
