Ingredients list for Buttermilk Herbed Chicken
- 750 grams Chicken on the bone cut into 2 inch pieces
- 1 cup Buttermilk
- 1 teaspoon Thyme finely chopped
- 1 teaspoon Oregano chopped
- 1 tablespoon Olive oil
- 4-5 Shallots finely chopped
- 1 tablespoon Garlic chopped
- to taste Crushed black peppercorns
- to taste Salt
- to deep fry Oil
- 2 Eggs beaten
- for coating Bread crumbs dried
- to serve Tomato ketchup
Method
- Mix together olive oil, shallots, garlic, thyme, oregano, crushed peppercorns, salt and buttermilk in a bowl.
- Add chicken pieces, mix well, cover with cling film and refrigerate to marinate for 4-5 hours.
- Heat sufficient oil in a pan.
- Coat each chicken piece with flour, dip in egg and coat with breadcrumbs.
- Deep-fry the prepared chicken pieces in hot oil till golden and crisp. Drain on absorbent paper.
- Serve hot with tomato ketchup.
