Ingredients list for Burrito Bowl
- ½ cup Red kidney beans (rajma) boiled
- 2 cups Cooked rice
- 2 tablespoons Sour cream
- 1 teaspoon Chipotle sauce
- 1 teaspoon Garlic chopped
- to taste Salt
- 1 tablespoon Lemon juice
- 6-8 Iceberg lettuce leaves
- ½ cup Corn kernels boiled
- 1 medium Tomato chopped
- ¼ cup Salsa
- ¼ cup Guacamole
- 4 tablespoons Fresh coriander leaves chopped
Method
- Put sour cream, chipotle paste, garlic, salt and lemon juice in a bowl and mix.
- Divide the rice equally into four medium bowls. Place few torn lettuce leaves and put some corn kernels, kidney beans and tomato on top.
- Sprinkle some salt on top and put some salsa, guacamole and coriander leaves. Drizzle some sour cream mixture on top.
- Serve immediately.
