Ingredients list for Breakfast Casserole

  • 3-4 medium Potatoes boiled, peeled and mashed
  • 2-3 medium Tomatoes cut into roundels
  • for greasing Butter for brushing and
  • 10-12 Bacon strips
  • 8 White bread slices
  • 4 Eggs
  • to taste Salt
  • to taste Crushed black peppercorns
  • to sprinkle Mixed herbs
  • for garnishing Fresh coriander leaves chopped


  1. Preheat an oven at 180º C. Preheat an electric griller and grease it with some butter.
  2. Fill a piping bag fitted with star nozzle with mashed potatoes.
  3. Grill the tomato roundels on preheated griller from both sides till grill marks appear. Transfer on a plate. Similarly, grill bacons trips and bread slices brushing with some butter and transfer on 2 different plates.
  4. Line an oval glass baking dish with grilled tomatoes. Pipe out mashed potato and place grilled bacon strips on top.
  5. Break eggs on top. Sprinkle some salt, crushed peppercorns and mixed dried herbs on top.
  6. Put the baking dish on a baking tray. Place the baking tray on preheated oven and bake for 8-10 minutes.
  7. Garnish with coriander leaves and serve with grilled bread slices.
