You are hungry? Poach an egg and have it topped with stir fried veggies – perfect protein source for the body! Check the freshness – keep a raw egg in a bowl of water. Fresh eggs will stay at the bottom while stale eggs stand on end or float.

Ingredients for Bhurji Frittata Muffins Recipe

  • Eggs 4

  • Onion , chopped 1 small

  • Potato , boiled, peeled and cut into small cubes 1 medium

  • Green chillies , chopped 2

  • Black peppercorns , crushed to taste

  • Turmeric powder 1/4 teaspoon

  • Red chilli powder 1/2 teaspoon

  • Salt to taste

  • Processed cheese , grated 2 tablespoons

  • Fresh coriander leaves , chopped 1 tablespoon

  • Cherry tomatoes 6 For topping


Step 1

Preheat the oven to 160º C

Step 2

Break eggs into a bowl, add onion, potato, green chillies, crushed black peppercorns, turmeric powder, red chilli powder, salt, cheese and coriander leaves and whisk well.

Step 3

Pour the mixture into silicon moulds, place 2 cherry tomatoes on each mould, keep them in the preheated oven and bake for 10-15 minutes.

Step 4

Remove the moulds from the oven, cool, demould and pack them in the tiffin box.
