Ingredients
- 4 eggs
- 1 small onion, chopped
- 1 medium potato, boiled, peeled and cut into small cubes
- 2 green chillies, chopped
- Crushed black peppercorn to taste
- ¼ teaspoon turmeric powder
- ½ teaspoon red chilli powder
- Salt to taste
- 2 tablespoons grated processed cheese
- 1 tablespoon chopped fresh coriander leaves
- 6-8 cherry tomatoes
Method
- Preheat the oven to 160º C
- Break eggs into a bowl. Add onion, potato, green chillies, crushed black peppercorns, turmeric, red chilli powder, salt, cheese, coriander leaves and whisk well.
- Pour the mixture into silicon moulds, place 2 cherry tomatoes on each mould and bake it in a preheated oven for 10 -15 minutes.
- Remove the moulds from the oven, cool, demould and pack them in the tiffin.
