Bhindi ki Sabzi

A simple ladyfinger dish – ideal for the daily meal. Ladyfingers are tempered and cooked with onions and Indian spices. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 500 grams Ladyfingers (bhindi), washed
  • 2 medium onions, finely chopped
  • 2 green chillies
  • 1 tablespoon oil
  • 1 tablespoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon dry mango powder (amchur)
  • Salt to taste

Method

  1. Pat dry the ladyfingers. Discard the heads and chop the ladyfingers.
  2. Heat oil in a non-stick pan, Add cumin seeds and let them change colour.
  3. Chop green chillies and add along with turmeric powder. Saute for 1 minute.
  4. Add onions and saute till translucent. Add ladyfingers, salt, coriander powder and dry mango powder. Mix well and cook on low heat till ladyfingers are tender.
  5. Serve hot.
