Ingredients
- ½ cup boiled and cubed carrots
- ½ cup green peas, boiled
- ½ cup french beans, halved and boiled
- 1 cup chopped spinach
- 2 cups white sauce
- 1 tablespoon butter + for greasing
- Black pepper powder to taste
- 2 tablespoons fresh cream
- Salt to taste
- 1 medium onion,finely chopped
- 1 teaspoon red chilli powder
- 4 tablespoons grated processed cheese
Method
- Preheat oven at 180ºC. Grease a baking dish with some butter.
- Boil sufficient water in a non-stick pan. Add spinach and blanch for a minute. Switch off heat and rinse in water.
- Blend blanched spinach into a fine puree, add to the white sauce and mix well. Add pepper powder and salt and mix. Add cream and mix well.
- Heat butter in a non-stick pan. Add onion and sauté till it turns translucent. Add carrot, peas and beans and sauté for ½ minute.
- Add salt, mix and sauté for a minute. Add red chilli powder, mix well and sauté on high heat for a minute. Switch off heat and cool to room temperature.
- Add prepared spinach sauce to the sautéed vegetables and mix well.
- Spread the prepared vegetable mixture in the greased baking dish. Top with cheese and bake in preheated oven for 10 minutes.
- Serve hot.
